Hello. They are both great options for distance riding. Aside from some features that are a bit different on each (pocket placement, color options, reflective, etc.) the chamois pads are a bit different while still having a few things in common: The Elite chamois is the thickest in our line (15mm at the sit bones) and it has a mid-density gel layer at the sit bones, whereas the Gel Touring is 12mm at the sit bones and has a very high-density gel layer. Everyone is comfortable in different ways so we like to have options but both styles are certainly designed for long distance riding.
