Hello. Both styles are in our long distance/higher mileage category and both pads have supportive gel layers in addition to all of the foam layers. The Elite style is one of our thickest pads (15mm thick at the sit bones versus 12mm for the Gel Touring style) but the Gel Touring style is a higher density overall. Some people like the extra thickness of the Elite but others are more comfortable in a thinner pad with a higher density instead.
Everyone is comfortable in different ways so we like to have a lot of options to suit every one's preferences, riding style, posture in the saddle, etc.
Since we manufacture these by hand, prices don't equate to one style being "better" than another. It's just that raw material and labor costs for each style are a bit different and that is reflected in the price. But both of these are certainly very well padded and also very popular.
